Cowboy Caviar

Ingredients

  • 1 c whole-kernel corn
  • 2 cans (16 oz each) black beans, rinsed and drained
  • ¼ c chopped fresh parsley
  • 2 Tbsp minced red onions
  • ¼ c balsamic vinegar
  • 2 Tbsp olive oil
  • 1 tsp lemon juice
  • 1 tsp minced garlic
  • 1 tsp honey or brown sugar
  • Salt
  • Ground black pepper

Directions

  • COMBINE the corn, beans, parsley, onions, vinegar, oil, lemon juice, garlic, and honey or brown sugar in a large bowl.
  • Let the salad marinate for 30 minutes at room temperature.
  • Add salt and pepper to taste.
