Cowboy Caviar
Ingredients
- 1 c whole-kernel corn
- 2 cans (16 oz each) black beans, rinsed and drained
- ¼ c chopped fresh parsley
- 2 Tbsp minced red onions
- ¼ c balsamic vinegar
- 2 Tbsp olive oil
- 1 tsp lemon juice
- 1 tsp minced garlic
- 1 tsp honey or brown sugar
- Salt
- Ground black pepper
Directions
- COMBINE the corn, beans, parsley, onions, vinegar, oil, lemon juice, garlic, and honey or brown sugar in a large bowl.
- Let the salad marinate for 30 minutes at room temperature.
- Add salt and pepper to taste.
