I found this recipe in the most "basic bitch" sort of way possible...fron Pinterest. However, it was an instant hit, and
since I'm constantly afraid that the site where it is saved (Kevin & Amanda)
will just decide to delete it
or shut down, I finally decided I should save it on popmatic.
Because...trust no one. Not even Kevin & Amanda. Who seem like LOVELY people.
Ingredients
2 Tblsp. Olive Oil
2 Cups Diced Onion
2 Cups Diced Carrots
2 Cups Diced Celery
1/2 tsp. Salt
1/2 tsp. Pepper
2 Cloves of Garlic, Minced
1 1/3 Cups Israeli Pearl Couscous
2 Cups Chicken Broth
12 oz (about 3 Cups) Chopped Chicken
Directions
Heat Olive Oil in a large skillet over medium high heat.
Add onion, carrots and celery. Season with salt & pepper and saute for 5-10 minutes, until softened and caramelized
Add garlic and combine until fragrant, about 30 seconds
Add couscous and broth, stir to combine then cover. Reduce heat to low and simmer for 8-10 minutes...until the broth is absorvbed
